Fudge is the original old time favorite chocolate sweet treat

According to legend, (although disputed) fudge was accidentally invented by a batch of failed candy; likely caramels, around the year 1886. From this failed candy batch came the exclamation of or the phrase ‘oh, fudge!’ The first time we have documentation of fudge was in a letter from New York. Emelyn Battersby Hartidge, a college student from Vassar, said that the cousin of a friend made fudge. In Baltimore in 1886, the confection sold for 40 cents per pound. Ms. Hartidge got the recipe two years later and made 30 pounds for the Senior Auction. Other colleges like Smith and Wellesley later created their own recipes for this sweet treat.

Just about everyone loves to eat rich, delicious fudge, but it is considered a hassle to make. The earliest recipes were a little ambiguous and extremely difficult. The degree of difficulty had a lot to do with the quality of equipment used, the type of ingredients, which recipe and the patience taken to make it right. Also, constant stirring and being sure of the cooking time, and precise measurements were vital in order to get the perfect fudge. Heating the ingredients to the appropriate temperature, and stirring for the proper amount of time are necessary in order for the fudge to be creamy and smooth and not gritty. Moreover it could be quite easy to under or over cook this sweet confectionery, which results in the candy not setting up or the unsatisfying taste of scorched ingredients.

Fudge by definition is a confectionery treat that is rich and creamy. A soft confection, customarily very smooth and made using fresh butter, sugar, corn syrup, sweet cream and often some incredible flavorings. Flavorings might be vanilla, butterscotch, chocolate, white chocolate, peanut butter, flavored gelatin, Kahlua, buttermilk, kool aid, maple, pumpkin, mint or even bourbon. Fudge could have nuts, such as pecans, walnuts, pistachios, hazelnuts, roasted macadamia nuts, and almonds. Other ingredients that are used in some of the more decadent or unusual fudge might be:  crackers, candy canes, popcorn, cheese, pineapple chunks, lime peel, candy bars, coconut, chocolate chips, cookie wafers, caramel, espresso beans, marshmallows, cherries and other dried or candied fruit, or chunks of chocolate.

LI Hing MUI (CHINA)

Actually, this unique candy made from dried plums and given li Hing powder that tastes sweet, sour, salty. This flavor combination creates a strong combination that is believed to cure throat diseases. This candy was originally only in China and some Asian countries. Then in the 1900s, this candy was first brought to Hawaii by an immigrant named Yee Sheong.

Nougat (FRENCH)

At a stopover in France, do not forget the taste of this nougat candy. This traditional yummy candy is processed with sugar or honey, nuts, pistachios, almonds, hazelnuts plus other dried fruits. Nougat texture is different, it is either soft or hard depending on the materials used. Not only the texture, but the color can vary. White nougat is made with egg whites; whereas, brown nougat is made from sugar caramel.

Turkish Delight (Turkey)

Remember the movie The Chronicles of Narnia: The Lion, the Witch, and the Wardrobe which was popular? in the film, there is a scene where Edmund tells the White Witch that his favorite candies is Turkish Delight! This candy whose real name is Lokum or Cyprus Delight deserves to be a favorite as it is soft and sticky like jelly beans plus it has small pieces of nuts like walnuts, almonds and a sprinkling of powdered sugar around it. Candies have been produced in Turkey since the 15th century.

Gummy Bear (GERMANY)

This candy is the original of the various forms of ‘gelatinous sticky’ candy that is popular in many countries! Soft candy was invented by Hans Riegel of Bonn in Germany in 1922. The tiny colorful candy originally named gummibar or gummibarchen which in English becomes gummy bear. This candy eventually arrived in The United States. There gummy bear candy has 5 distinctive flavors namely rapsberry (red color), orange (orange), strawberry (green), pineapple and lemon (yellow color).

Botan RICE CANDY (JAPAN)

This candy came from Japan. Botan Rice Candy is very soft, chewy, tastes like lemon rice and coated paper. This candy has a “plastic” texture and it is dry but if it is eaten, it will melt in your mouth. This is a traditional type of Japanese sweets, and it is being imported into North America from Japan by International Permen JFC. Botan Rice comes in a small cardboard box containing a 3/4 oz. (21 grams) of candy. Each box contains six individual pieces and stickers. Before 1998, each box contained a small plastic toy. The name of the candy, Botan means ‘peony’ in Japanese. A peony flower bloom appears on the label, in addition to hariko-Inu, dog-shaped traditional toys for children of Japan.

BRIGADEIRO (BRAZIL)

Brigadeiro candy is made from milk and cocoa powder and the name itself is taken from an Air Force general in Brazil in the 1940′s, Brigadier Eduardo Gomez. The candy is named in the general’s honor. It is tasty and has an attractive shape which often makes this candy a favorite decoration on cakes for birthdays.

GINGER CANDY (INDONESIA)

Ginger candy is indeed classified as old-fashioned candy. It was already recorded in the book “Island of Java” by John Joseph Stockdale. British travelers, are said to have in 1778 from the Netherlands sent about 10,000 pounds (or about 5,000 kilograms) of the product called Candied Ginger from Batavia to Europe. This food is popular in Europe due to its cure for bloating or in scientific terms flatulence. It also is the perfect candy to warm the body and refresh the throat–especially from the cold air. The original candy is from Indonesia and is known as a spice in that country.
